Shiro dashi is an alternative to tsuyu (dipping sauce) when you don't want to add a dark colour to your dish. Made from lots of delicious things like white soy sauce, bonito dashi (broth), mirin, konbu seaweed and shiitake mushrooms, it gives a wonderful, full-bodied taste.
